Conchiglioni are giant pasta shells from La Molisana's Special range, big enough to fill. They're made from high-protein Italian durum wheat and drawn through bronze dies for a rough, porous surface.

Stuff them with ricotta and spinach, or with a meat and mushroom filling, then bake in tomato sauce under a layer of cheese. They're also great with chunky sauces.
