Orecchiette, "little ears", come from Puglia, where they've long been shaped by hand at home. La Molisana's version keeps the traditional dome shape with a thicker rim and a wrinkled texture that captures sauce. It's made from stone-dehulled Italian durum wheat and drawn through bronze dies.

The classic way to serve them is with cime di rapa (turnip tops), garlic, chilli and anchovy, but they're just as good with broccoli and sausage, or a rich tomato sauce.
