Bucatini, also called perciatelli, are thick spaghetti with a hole (buco) running through the middle that collects the sauce. La Molisana makes them in Molise from Italian durum wheat that is stone-dehulled before milling, then bronze-drawn.

They're the classic shape for bucatini all'amatriciana with guanciale (cured pork cheek), tomato and pecorino romano, and are great with any rich tomato sauce.
