Pantorrone is a speciality of Campania: a soft, sponge-like centre flavoured with the aromatic Liquore di Benevento and wrapped in a dark chocolate coating. It's rich, elegant and quite unlike ordinary torrone.

Di Gennaro makes it in Irpinia, close to Benevento, where this liqueur is a local tradition. Serve it cut into slices with espresso as a grown-up after-dinner treat.
