Sapori Panforte Margherita is a classic Sienese Christmas cake, the white and gently spiced version of Tuscany’s best-known festive sweet. It was first made in 1879 in honour of Queen Margherita of Savoy’s visit to Siena. Compared with the darker, peppery original, the Margherita uses fewer spices and is finished with a snowy dusting of icing sugar.

It is a dense, flat, round cake, similar to a soft torrone. It is traditionally made with nuts, candied citrus fruit, honey and warm spices, then baked until firm. Serve it cut into thin wedges with coffee or a glass of sweet dessert wine, at the end of a meal or as a gift at Christmas.
