Tubetti are small, short tubes, a little smaller than ditali, and a favourite for soups. La Molisana makes them in Molise from stone-dehulled Italian durum wheat, bronze-drawn for a porous surface.

Use them in minestrone, pasta e piselli (with peas), pasta e lenticchie or any hearty bean soup.

Nutrition: per 100g (uncooked): 351kcal (1489kJ), 1g fat (0.3g saturates), 70g carbohydrate (4g sugars), 3g fibre, 14g protein and 0.02g salt.
