Lumachine are little snail-shaped pasta, a smaller version of lumache rigate. La Molisana makes them in Molise from Italian durum wheat that is stone-dehulled before milling, then drawn through bronze dies.

Their compact size is perfect for soups, minestrone, pasta e fagioli and children's dishes, and they're also good with light vegetable sauces.
