Lumache Rigate are ridged snail-shaped pasta, with a curled, open end that fills with sauce. La Molisana makes them in Molise from stone-dehulled Italian durum wheat, bronze-drawn for a rough, porous surface.

They're great with chunky sauces of sausage, peas or mushrooms, with creamy cheese sauces, and in baked pasta.
