Gnocchetti Sardi, also called malloreddus, are small ridged shells from Sardinia, traditionally rolled by hand. La Molisana makes them in Molise from stone-dehulled Italian durum wheat and draws them through bronze dies for a rough, ridged surface.

Serve them the Sardinian way, alla campidanese with a sausage and tomato sauce and plenty of pecorino, or with a simple tomato and basil sauce.
