Ditali, "little thimbles", are short, wide tubes that are a staple of southern Italian soups. La Molisana makes them in Molise from Italian durum wheat that is stone-dehulled before milling, then bronze-drawn.

They're the classic shape for pasta e fagioli, pasta e ceci and minestrone, and are also good with a chunky vegetable sauce.
