Cinesine are a tiny soup pastina, a favourite with children in Italy. La Molisana makes them in Molise from Italian durum wheat that is stone-dehulled before milling, then bronze-drawn.

Add them to chicken broth, vegetable soup or minestrone, or serve them simply with butter and Parmigiano.
