Pappardelle are wide, long ribbons, the broadest of the ribbon pastas, made for rich, full-bodied sauces. La Molisana's durum wheat version is part of the Special range, made from high-protein Italian wheat and bronze-drawn.

They're the traditional partner for slow-cooked game ragù such as wild boar or hare, and are equally good with duck, beef ragù or porcini.
