Pennoni Rigati are penne at their most generous: wide, ridged tubes cut on the diagonal, with plenty of room inside for sauce. La Molisana makes them in Campobasso, Molise, from Italian durum wheat that is stone-dehulled before milling, then draws them through bronze dies for a rough, matt surface.

With protein never below 14%, they stay firm and al dente, so they're ideal for baked pasta, ragù, sausage and broccoli or a spicy arrabbiata. The ridges and the open ends hold every last drop of a hearty sauce.
