Anelli Siciliani are small pasta rings, the shape behind Sicily's famous anelletti al forno, a baked pasta of ragù, peas and cheese. La Molisana makes them in Molise from Italian durum wheat that is stone-dehulled before milling, then bronze-drawn.

Bake them Palermo-style in a timballo, or use them in soups and broths. They're also a big hit with children.
