Conchiglioni are giant pasta shells, made for stuffing and baking. Their deep hollow holds fillings such as ricotta and spinach, or meat ragù.

Stuff them and bake with tomato sauce and mozzarella, or serve them with a chunky sauce that settles inside each shell. This is one of Granoro's "grandi specialità": large traditional shapes with a rough surface, made slowly and dried gently so they hold sauce beautifully.
