Capellini ("fine hairs") are very thin strands of pasta that cook in just a few minutes. Granoro makes them in Corato, Puglia, from durum wheat semolina.

They're lovely in light broths, with fresh tomato and basil, or with butter and lemon, and they're a favourite for quick lunches. Like all of Granoro's Classici, this pasta keeps its golden colour and the aroma of ripe wheat, and stays firm and al dente long after cooking.
