Ditalini Rigati are small, ridged tubes ("little thimbles"), a staple of southern Italian soups. Granoro makes them in Corato, Puglia, from durum wheat semolina.
They're the classic choice for pasta e fagioli, pasta e ceci and minestrone. Like all of Granoro's Classici, this pasta keeps its golden colour and the aroma of ripe wheat, and stays firm and al dente long after cooking.
